For example, if you have a table with people and clothes sizes and you want to sort it by size (smallest to largest), you can't do this normally, unless you use Custom Sort.
For screenshots see the link above, I will only write the text below.
1. Select a cell in the column you want to sort by. In my example I've put sizes in column A and I've chosen to use these sizes in my table: XS, S, M, L, XL, XXL. I have table headers in row 1 and data in row 2-18
2. Go to HOME tab, click on Sort & Filter and choose Custom Sort
3. In Sort by drop down list select the column you want to sort by
4. Order drop down list select Custom List...
5. In the List entries field put the order you want your table sorted in, 1 value on each row (you can see examples by clicking the predefined Custom Lists); in my case I want to sort them in this order: XS S M L XL XXL
6. Click on OK, then OK again and your table is custom sorted.

To create a custom list, go to File - Options - Advanced, then scroll down for the General section and click on the Edit Custom Lists... button. Create your desired custom list.
Then do the Home - Sort & Filter - Custom Sort - More Options, uncheck "Sort automatically every time the report is updated", then under the First key sort order drop down list choose the list you previously created.
