The easiest solution would be to use a free, portable software called FileTypesMan:

Add custom icons like this:
1. Open FileTypesMan
2. Find the desired extension (eg .epub)
3. Double click on it to open more options
4. Near the Default Icon field click on the ... button
5. Browse for the dll, exe or ico file you want to add as an icon and select it
6. In FileTypesMan Edit File Type window click OK
7. Go to View and click on Refresh

If you are looking for a thrill and want a more advanced way, check registry editing below - tested and didn't work

1. Open regedit

2. Under HKEY_CLASSES_ROOT navigate to the desired subkey with the extension, eg .epub

3. Right click on .epub and New -> Key

4. Name it DefaultIcon

5. Under that key edit the value of (Default) to the path of your icon. If it's inside of a DLL file, make sure you add the index number, eg:
"D:\! ICO epub mobi etc\iCONS.dll",17

6. Now you need to refresh the icons cache for the changes to take place. To do that you have to restart your PC or try one of the PowerShell commands from the links below:
or

or try this:
