1. Open WinRAR
2. In the menu select Options - Settings
3. Go to the Compression tab
4. Click Create Default button
5. Set your default desired preferences (eg. ZIP, best compression) and click OK
6. Close WinRAR
7. Now right click a file you want to compress and you will see that the default option "Add to FILENAME.rar" changed to "Add to DEFAULT.zip". The compression will be the one you set at pt. 5.

Post #1 is the simple way when you want one default for all files.
How about when you want multiple profiles added to context menu?
I added the following profiles for various applications:
- (A) Each file separate ZIP, Store
- (B) All to one ZIP, Store
- (C) Each file separate RAR, Best
- (D) All to one RAR, Best
1. Open WinRAR
2. Go to Options - Settings - Compression
3. Create default:
3.1. (A) - "ZIP" = selected, "Store" = selected, Files tab - "Put each file to separate archive" = checked, OK
3.2. Organize, Default Profile - Edit, "Profile name" = Each file separate ZIP, Store, "Set profile as default" = unchecked, "Add to context menu" = checked, "Immediate execution" = checked, OK, Close
4. Repeat steps 2 and 3 for (B), (C), and (D)
5. You can also create a truly default profile, as the common and default WinRAR profile: RAR, Normal, "Put each file to separate archive" = unchecked. No need to add this to context menu
