In your desired range, insert the dates for 1 week from Monday to Friday, then select the 5 dates and right click (yes, right not left) on the bottom right square when the emboldened + sign appears and drag down for as many dates as you want.
When you release the right mouse button, you will be presented with a context menu which has various options, among which one is Fill Weekdays. So click that.
Done.
