This is not a tutorial on how to remove a signature from a PDF document, but how to remove the signature itself so it doesn't appear as an option when you sign a PDF file.
1. Open Adobe
2. Go to Edit - Preferences - Signatures
3. Click the "More..." button under Identities & Trusted Certificates
4. Export the signature you are unsure about, for backup just in case
5. When ready to delete a signature, select it and click Remove ID
