Find out what Kindle model you have:
Navigate in your Kindle's settings - Device Info and check the first 6 characters of your Serial Number.
Then:

If the latest software doesn't download automatically to your device, update it manually by connecting your device to a computer.
1. Using a computer, download the file for your Kindle from Kindle E-Rreader Software Updates.
2. Turn on your Kindle.
3. Connect your Kindle to your computer using the included charging cable.
4. Drag and drop the downloaded update file from your computer onto the "Kindle" drive.
5. After the file has transferred successfully, eject the Kindle to safely disconnect your Kindle from your computer.
6. Disconnect the charging cable from your Kindle and your computer.
7. On your Kindle home screen, tap the Menu icon, and then tap Settings.
8. Tap the Menu icon again, and then tap Update Your Kindle.
9. Tap OK to perform the update.
10. Message Your Kindle Is Updating appears.
After the update is complete, your Kindle automatically restarts. Plug your Kindle in to charge and let it sit overnight allowing your books to index.

For example, I have an older Kindle Touch (4th generation) from 2011 which has firmware version v5.0.1.
For updating that, I need 3 different updates to get to the latest which is 5.3.7.3:
1. Prior to 5.1.0 - Download and install Software Update 5.1.0.
2. 5.1.0, 5.1.1, 5.1.2 - Download and install Software Update 5.3.2.1.
3. 5.3.2, 5.3.2.1, 5.3.7, 5.3.7.1, 5.3.7.2 - Download and install Software Update 5.3.7.3
