Either use text array to exclude values:

or use a range of cells:
=SORT(
UNIQUE(
FILTER(
G9:G404;
ISNA(MATCH(G9:G404; H2:H10; 0))
)
)

Note: The text array with 1 item will not work by simply writing it as "just this one thing to exclude" - it HAS to be added between curly brackets: {"just this one thing to exclude"}. Otherwise it will return CALC error.
